Winter that begins with the fields and travels through family kitchens. In Punjab, that comfort has always begun with sarson. Mustard leaves harvested in the cold, slow-cooked with spinach and winter greens till they melt into a rich saag. A dollop of white butter, and beside it, the perfect partner - makke ki roti pressed gently between the palms before it hits the tawa.
