At Ustaads, to make chilli chicken, boneless chicken is cut into bite-sized pieces and marinated in a mixture of cornflour, soy sauce, vinegar, ginger-garlic paste, and other spices. In a separate pan, onions, bell peppers, and green chillies are sauteed in oil until they are soft and slightly caramelized. The deep-fried chicken is then added to the pan along with a spicy sauce made from soy sauce, vinegar, tomato ketchup, and red chilli paste.
