Ankit saw in chaos a blank canvas. With only a 10-member core team and about 50–60 people across 7–8 company-owned stores, he began building the foundation of The Belgian Waffle Co brick by brick. His approach was simple: turn food, an art, into a precision-driven science.

Before even joining formally, he had already drafted a five-year vision for the company, a roadmap of what the brand could become.

He firmly believed that standardization was the secret to scalability.
