Onam Healthy Recipe:
Sadya Special Varutharacha Sambar
INGREDIENTS:
Toor dal -1/2 cup
Drumsticks-1
Brinjal-1
carrot -1
Ladies finger-5-6
Tomato-1
Shallots-8-10
Cucumber-1 cup
Turmeric powder
Tamarind-gooseberry size
Oil-1 tbsp
Chana dal-1/2 tsp
Urad dal -1/2 tsp
Cumin seeds-1/2 tsp
Fenugreek seeds -1/6 tsp
Coconut-1/4 cup
Shallots-3
Curry leaves-4
Dry red chillie-3-4
Coriander seeds-1 tbsp
Oil-1tbsp
Mustard seeds-1 tsp
Dry red chillies-2-3
Curry leaves
METHOD:
Pressure cook dal with cucumber, turmeric powder and water
After the pressure settles open the cooker and add all vegetables.cook for 1 whistle
In a frying pan add 1 tbsp oil.
Add chana dal, urad dal, fenugreek seeds, cumin seeds. Coconut ,shallots curry leaves, coriander seeds and chillies until coconut get brown color.
Then grind this to a fine paste .
After the pressure settles open the cooker and add ground paste.
Add tamarind juice
Took it in medium flame till the gravy thickens.
Heat oil in pan splutter mustard seeds fenugreek seeds, dre red chillies , curry leaves and chilli powder. Pour this to sambar and mix well.keep covered still served.

Shallots - 50 g
Green chilli - 2 - 10 g
Turmeric powder - ½ tsp - 2.5 ml
Salt - ½ tbsp - 7.5 ml
Coconut oil - 2 tbsp - 30 ml
Mustard - ½ tsp - 2.5 ml
Dried red chilli - 4
Black gram - 1 tbsp - 15 g
Curry leaves
METHOD:
In a large bowl, add the cabbage, coconut, green chilli, turmeric powder and salt. Mix well using your hands.Then in a pan, heat the coconut oil. Add mustard seeds and dry red chilli.when they splutter, add the urad dal and curry leaves. Then add
the cabbage mixture to the pan. Stir well and cover with a lid. Cook on low heat.

Onam Healthy Recipe:
Sadya Style Urulakkizhangu Masala Curry | Potato Masala Curry
I N G R E D I E N T S :
Potato-2
Carrot chopped- 1
Onion sliced- 2 medium
Tomato -2
Ginger garlic paste- 1&1/2 tbsp
Curry leaves- 2 springs
Pepper powder - 1 tsp
Chilly powder-2 tsp
Coriander powder- 2 1/2 tsp
Garam masala- 1/2tsp
Meat masala- 1/2 tsp
Coconut milk- 1/2 cup
Grated coconut- 3/4 cup
Oil
Salt to taste
METHOD:
Heat one tsp of oil in a pan. Add coconut and a few curry leaves. Roast till the coconut becomes brown. Then add coriander powder and chilli powder . Roast for a minute.When it cools down make a smooth thick paste.
Heat oil a heavy bottom pan and saute thinly sliced onion, curry leaves till its tender .Saute ginger-garlic paste till the raw flavor disappears. Add chopped tomatoes and saute till tomato becomes soft and mushy.
Add pepper powder and salt. Stir for a minute and add chopped potatoes and carrots.
Add coconut paste,coconut milk and 1/2 cup of water,cover and let it cook for one whistle. Switch off the stove and let the pressure go all by itself. finally add garam masala, meat masala and mix well. Serve with rice
