HOW TO MAKE A BOWL OF FEEL-GOOD KITCHARI

Rise above the fatigue of the fall routine with this simple, versatile and delicious Ayurvedic meal staple to boost health, aid digestion and make the whole family feel good ?
- 1 tbsp coconut oil or ghee
- 1 star anise
- ½ tsp mustard seeds
- ½ tsp turmeric powder
- 1 large zucchini, cut into cubes
- 1 carrot, cut into cubes
- 1 cup of rice
- ½ cup of mung beans soaked the day before
- Peas or other vegetables optional, to taste
- 1½ cups of water

1. Heat the coconut oil/ghee in a saucepan, then add the spices and cook for 5 minutes until fragrant
2. Add all the remaining ingredients and cook on a high simmer until all the water has been absorbed
3. Serve hot, garnished with fresh coriander leaves
