Currently one of the most requested recipes so here it is!
Hidden fruit & veggie baked oats. Below is the basic recipe I use as the base, then I’ll add different toppings depending on how I feel.
Ingredients:
100g wholemeal flour
100g oats
2 heaped teaspoons baking powder
1 teaspoon cinnamon (optional)
2 small/1 large very/over ripe banana mashed
1 large grated apple
1 grated carrot
2 eggs
2 teaspoons maple syrup or honey
My favourite options for toppings
Blueberries & raspberries
Dark chocolate chunks
Flaked almonds
Method:
Heat oven to 180’c
Mix everything together & add desired toppings.
Bake in a 8x6inch oven safe dish for 20-25 mins
Allow to cool slightly & serve with an extra drizzle of honey & any extra toppings. My favourites are Greek yoghurt & walnuts??
