High Protein Broccoli Soup
2 cups broccoli florets
1 cup chopped mushrooms
1 onion quartered
5-6 cloves garlic
100 g low fat paneer
2 tsp olive oil
salt and pepper to taste
1/2 tsp mixed herbs
1/2 tsp chilli flakes
1 cup spinach
1 tsp lemon juice

In a baking pan, add broccoli, mushrooms, onions, garlic along with paneer slab. Add salt, pepper, mixed herbs, chilli flakes and olive oil and bake in preheated oven at 180C for 10-15 mins.
Blend the mix along with water and spinach till smooth.
Warm in a pot, taste and adjust seasoning.
Serve warm garnished with coriander leaves, chili flakes and lemon juice.
