Since so many of you asked for my mummy’s Aloo Thukpa recipe, what better day than Today to finally share it. Cooked with love, wearing a little something special from @sochstories
Aloo Thukpa — Sikkimese Style❤️ Ingredients:
For Aloo Dum:
½ kg potatoes 10 dry red chillies 1 large tomato (cut into 2 pieces) 10-12 medium garlic cloves 1 tsp turmeric powder ½ to 1 tbsp salt (as per taste) A pinch of taste enhancer (optional) 3-4 tbsp mustard oil ½ tsp kala jeera (black cumin)
For Thukpa (Noodles):
Noodles of your choice (I used whole wheat atta noodles) 1 tsp turmeric powder 1 tsp olive oil (or any oil you prefer)
For Garnish:
Freshly chopped coriander Freshly chopped onion
Method:
Aloo Dum:
-Clean and pressure cook ½ kg potatoes for 2-3 whistles on medium flame. -Once cooled, peel and cut into medium-sized cubes. -In a pan, boil 10 dry red chillies and 1 large tomato (cut into 2 pieces). -Once the tomato is soft, let it cool. -Blend the boiled chillies, tomato, and 10-12 garlic cloves into a fine paste. -Pour this paste into a bowl. Add 1 tsp turmeric, ½ to 1 tbsp salt, a pinch of taste enhancer (optional), and a little water( hot water). Mix well. -Heat 3-4 tbsp mustard oil in a kadhai. -Add ½ tsp kala jeera. -Add the masala paste (half for less gravy, full for more). -Cook on low flame until the garlic smell disappears and oil starts separating. -Add the cooked potato cubes and a little warm water. Stir well for 1 minute and let it cook for another 1 minute -Turn off the heat.
Thukpa (Noodles):
-Boil water in a pan. -Once it starts boiling, add noodles and cook on high flame (I used atta noodles and cooked for 10 mins). -Add a little turmeric powder and 1 tsp olive oil while boiling. -Once cooked, immediately drain and rinse under cold running water to stop overcooking. -Drain completely, rub a little olive oil on your palms and mix with the noodles to prevent sticking.
To Serve:
Garnish the hot aloo dum with freshly chopped coriander and onion. Serve it hot alongside your Thukpa/ Waiwai noodles for the perfect cozy meal. ?
*tip*:- cook noodles first then cook aloo. Always use hot water ??
