Rose Pistachio Shrikhand Quinoa Tarts ✨

A dessert that’s as festive as it is wholesome — crisp quinoa tart shells filled with creamy rose-pistachio shrikhand.

For the Quinoa Tart Shells
¾ cup quinoa • 2 tbsp powdered jaggery • 3 tbsp melted desi ghee • 1–2 tbsp milk or water • pinch of salt

For the Rose Pistachio Shrikhand
1½ cups hung curd • 2 tbsp honey • 1 tbsp rose water and/or elaichi powder • 1–2 tbsp pista paste • chopped pistachios & rose petals to garnish

?‍? Method
1. Make quinoa flour: Rinse and drain quinoa well, then dry roast till nutty and golden. Cool and grind into a fine flour.
2. Make tart dough: Mix quinoa flour, jaggery, and salt. Add ghee, then a little milk to form a soft dough. Press into tart moulds and bake at 170°C for 12–15 mins until golden.
3. Make shrikhand: Whisk hung curd, honey, rose water, and pista paste until creamy. Chill.
4. Assemble: Fill the cooled tart shells with rose-pistachio shrikhand. Garnish with pistachios and rose petals.
