Happy World Biryani Day is on 6th July! Cooked one of my personal fav recipes at home to celebrate. Dindigul Chicken Biryani

1.5kg Chicken on the bone
Salt to taste
3 tbsp Ginger garlic paste
Juice of 1/2 a lemon
Marinate the chicken

For the Biryani masala
.
2 Bay leafs
2 tbsp Coriander seeds
1 tbsp Jeera
1/2 tbsp Saunf
8 to 10 Cashews
1 1/2 tbsp Black peppercorns
2 inch Cinnamon stick
1 tbsp Stone flower
1/2 inch Mace
4 to 5 Cloves
4 Green cardamom
Dry roast till fragrant
& blend into a fine powder

For the Biryani wet base
.
350g Madras onions
4 Green chilies
12 to 15 Garlic cloves
1 inch Ginger
1/2 bunch Coriander
A handful of Mint
Blend into a fine paste
.
2 tbsp Ghee
1 tbsp Oil
Add the paste
& cook till browned
3 tbsp Biryani masala
Mix well
1 tsp Red chili powder
1/4 tsp Haldi powder
Mix well
Add the chicken
& coat it well with the masala
1 cup Beaten yogurt
Mix well
& cook for 5 mins
1 kg Seeraga samba rice, soaked
Add the rice
1.5ltrs Water
Mix well
Cover & cook on low flame
for about 25 mins
or till all the water is absorbed
Serve hot with pyaaz raita
