Delhi’s Iconic Moti Mahal’s DAL MAKHANI recipe. With passing time, many variations came. One with milk, or with fresh cream to make it rich and creamy, but the real dal makhani is made only with makkhan (butter). In this recipe, you will need minimal ingredients and lots of butter just like they make in Delhi’s ICONIC Restaurant MOTI MAHAL. @motimahalofficial
I have used @isayorganic Dal Makhani mix which has a proper proportion of urad dal and rajma and needs to be soaked only for an hour.
Ingredients - 1-1/2 cup I Say Organic’s Dal Makhani Mix Water, as required 1 cup Garlic water (minced garlic soaked in water for about an hour) 6 tbsp butter (divided into 3) 1 tbsp ghee 2 tbsp ginger garlic paste 2 tsp Kashmiri red chilli powder 1 cup tomato puree Salt, to taste
For tadka - 2 tsp ghee 1 tsp Kashmiri red chilli powder 1 tsp kasuri methi, crushed
Instructions - Add dal makhani mix, garlic water and 4 cups of water in a pan. Let it cook for 35-40 minutes on low medium flame until the dal is soft. Keep adding more water when you feel dal is becoming thick. (Never pressure cook, because that way you will not get the authentic dal makhani consistency and flavour) Once the dal is cooked, add 2 tbsp butter and mix it well. Cook for 5 more minutes. In a pan, add ghee. Add ginger garlic paste, Kashmiri red chilli powder and cook until the raw smell goes away. Add tomato puree and cook until it leaves the ghee from the sides. Add this mixture in the dal with 2 tbsp butter and mix it well with wooden madani or any mixer as shown in the video. Let it cook for another 10-15 minutes. To make the tadka, heat ghee. Add Kashmiri red chilli powder, kasuri methi and a little water so that the chilli doesn’t burn and loose its colour. Add the tadka, 2 tbsp butter and mix it well.
