Pasta is food, but sometimes it can be art too 🤌🏻 Making Roasted Pumpkin & Ricotta Tortellini, finished with sage butter and Parmesan. The filling is simple — sweet roasted pumpkin, creamy ricotta, Parmesan, nutmeg and cracked pepper. But I wanted the pasta itself to be the star. So I made separate sheets of pink, yellow & black pasta, layered them onto the classic dough and rolled them together again — laminating the colours into the sheet. As the dough gets thinner, the patterns stretch and every tortellini becomes a little piece of edible art. Cut. Fill. Fold. All by hand. Boiled until tender, tossed in golden sage butter and finished with freshly grated Parmesan. Sweet pumpkin. Creamy ricotta. Nutty butter. Crispy sage. Parmesan. Almost too pretty to eat. Almost. 🤌 Good ingredients, good hands, a little imagination — and a lot of patience.
